How to Make 3 Ingredient Vegan Peanut Butter Cookies (Recipe). Peanut Butter cookies are delicious and in this video, I'll show my recipe for healthy, vegan and gluten free Peanut Butter Cookies!

I’m not sure why I’ve been all nostalgic lately and taking desserts from my childhood and making them healthy, but we’re continuing with that theme today. Today, we are making 3 ingredient vegan peanut butter cookies. What I really like about these cookies is that they are easy to make, healthy and gluten-free. Since they are vegan, you can make these without any eggs!

For this recipe, you will need the following ingredients:

3/4 cup of peanut butter. I’m using a plain peanut butter. The only ingredient is peanuts and it has not been mixed. If you buy one like this, be sure to mix it well before for the recipe.

4 1/2 TBL Lakanto Monk Fruit Maple Syrup Sweetener or Maple Syrup. What I really like about Lakanto is that it is a zero glycemic and zero calorie sweetener. You can adjust this, depending on how sweet you like your cookies. You may also want to add less if the peanut butter using is already sweetened.

3 TBL Coconut Flour, which is gluten free and also high in fiber

Now comes the easy part! Place these 3 ingredients into a food processor and process until everything is mixed together well. Next, take some of the mixture and roll it up into a small ball and place it onto a lined baking sheet. Take a fork and press down twice on the cookie, make that criss cross hashtag design we spoke about earlier. Place them into an oven at 350 degrees, and after about 12 minutes, it's time to have some 3 ingredient vegan peanut butter cookies!

You are left with 12 delicious and peanut buttery cookies that make a great snack or dessert!
